Colombia Las Pulgas is produced at Finca Las Pulgas, a farm dedicated to environmental conservation and high-quality coffee cultivation. The farm is owned by Iván Molano, who inherited it at 20 and has since expanded and refined its operations. Nestled in Planadas, Tolima, the farm benefits from rich volcanic soil, a diverse ecosystem, and high altitudes, all contributing to the complexity of its coffee. The surrounding forests remain untouched, creating a balanced environment that enhances the terroir of this unique coffee.

Planadas, located in southern Tolima, is one of Colombia’s most renowned coffee-growing areas. Situated in the foothills of the Central Mountain Range, its high altitudes and tropical climate provide optimal conditions for growing specialty coffee. The region is known for its commitment to organic and sustainable farming practices, preserving both the land and the quality of the coffee. The combination of rich soils, cool nights, and warm days results in a slow maturation process, allowing the coffee to develop its characteristic sweetness and complexity.

The careful processing of Colombia Las Pulgas plays a crucial role in developing its distinctive flavor profile. After handpicking only fully ripe cherries, the coffee undergoes density sorting and a 24-hour fermentation in whole cherries. It is then de-pulped and further fermented in tanks for 50 hours, enhancing its bright acidity and sweetness. Following fermentation, the beans are washed and dried on ventilated roofs for 17 to 22 days, depending on weather conditions, ensuring even drying and flavor consistency.

For roasting, Colombia Las Pulgas is typically given a light to medium roast to preserve its fruity and floral notes while allowing its natural sweetness and velvety body to shine. This approach highlights the vibrant acidity and complexity of the coffee, making it perfect for filter brewing.
